To prepare, peel and dice 4 cups of russet potatoes. 1/2 cup finely chopped onion 1/2 cup finely chopped celery 4 cups chicken broth 1-cup heavy cream 4 tbsp unsalted butter
1/4 cup all-purpose flour 1/2 tsp garlic powder Salt and pepper to taste Optional garnish: chopped chives or green onions Optional cheddar cheese shredding
Instructions: Melt butter in a big pot on medium. Add chopped onion and celery and simmer for 5-7 minutes to soften. Add flour to the cooked vegetables and butter and stir constantly to produce a roux. Cook for 2-3 more minutes to eliminate raw flour taste.
Add chicken broth slowly, stirring constantly to avoid lumps. Simmer the mixture. Add diced potatoes to the pot and season with garlic powder, salt, and pepper. Mix well. Cook the soup over medium-low heat, stirring periodically, until the potatoes are cooked and the soup thickens, 20–25 minutes.
Pour in the heavy cream and boil for 5 minutes once the potatoes are done. Taste the soup and add salt and pepper if needed. Serve potato soup in dishes with chopped chives or green onions and grated cheddar cheese.
Serve this homemade potato soup hot for comfort! To thicken the soup, crush some cooked potatoes against the pot or use an immersion blender to partially mix.
