Tofu and Edamame Salad with Wasabi Dressing—A Pan-Fried Delight!

Tofu and edamame salad with wasabi dressing is tasty and healthy. Use this simple recipe to make this tasty dish: Ingredients: 

For salad: 1 block firm tofu, drained and pressed 1 cup shelled edamame 4 cups mixed salad greens (spinach, arugula, kale) 1 finely sliced cucumber 1 thinly-sliced bell pepper 1 shredded carrot 1/4 cup chopped green onions Sesame seeds for garnish 

For dressing: Two tablespoons soy 1 tbsp rice vinegar One tablespoon sesame oil 1-tbsp honey or maple syrup (vegan) 1 tsp wasabi paste (to taste) 1 minced garlic clove 1 tsp grated ginger Salt and pepper to taste 

Instructions: Prepare tofu: Cube or slice pressed tofu. Heat a non-stick skillet on medium and lightly oil it. Tofu should be golden brown on all sides after 5-7 minutes in the pan. Allow to cool. 

Make the dressing. Mix soy sauce, rice vinegar, sesame oil, honey or maple syrup, wasabi paste, chopped garlic, grated ginger, salt, and pepper in a small bowl. Adjust spice to taste. 

Salad assembly: Mix mixed salad greens, cucumber, bell pepper, carrot, and green onions in a big bowl. Put cooked edamame beans and pan-fried tofu in the bowl. 

Dip in dressing: Pour dressing over salad and gently toss until coated. Serve with garnish: Garnish salad with sesame seeds. Serve immediately or refrigerate until ready.
