Several Recipes for Beetroot That You Should Attempt at Home  

Beetroot Salad: Combine grated or thinly sliced beetroots with mixed greens, toasted nuts (such as walnuts or almonds), crumbled feta cheese, and a tangy vinaigrette dressing made with olive oil, balsamic vinegar, Dijon mustard, and honey. 

Roasted Beetroot: Toss peeled and cubed beetroot with olive oil, salt, pepper, and your choice of herbs (such as thyme or rosemary). Roast in the oven at 400°F (200°C) for 25-30 minutes, or until tender and caramelized. Serve as a side dish or add to salads and grain bowls. 

Beetroot Hummus: Blend cooked beetroots, chickpeas, tahini, garlic, lemon juice, and olive oil in a food processor until smooth and creamy. Season with salt, pepper, and cumin to taste. Serve with pita bread, crackers, or vegetable sticks for dipping. 

Beetroot Soup: Sauté chopped onions, carrots, and celery in a large pot until softened. Add diced beetroots, vegetable broth, and a splash of apple cider vinegar. Simmer until the beetroots are tender, then puree the soup until smooth. Season with salt, pepper, and a dollop of Greek yogurt or sour cream before serving. 

Beetroot Risotto: Cook Arborio rice in vegetable broth until creamy and al dente. In a separate pan, sauté diced beetroots with garlic, shallots, and thyme until tender. Stir the cooked beetroots into the risotto along with grated Parmesan cheese and a knob of butter. Serve hot with extra Parmesan cheese and freshly ground black pepper. 

Roll store-bought puff pastry into a rectangle and spread with softened goat cheese. Place thinly sliced beetroots on top, overlapping. Add olive oil, fresh thyme, salt, and pepper. Bake the pastry for 20–25 minutes at 400°F (200°C) until golden brown and crispy.  

Beetroot Smoothie: Blend cooked beetroots with frozen berries, banana, Greek yogurt, and a splash of orange juice until smooth and creamy. Add honey or maple syrup to taste, if desired. Pour into glasses and garnish with fresh mint leaves or a sprinkle of chia seeds.
