Recipe: Whole-Grain Stuffing With Apples, Pears and Toasted Nuts 

Here's a delicious recipe for whole-grain stuffing with apples, pears, and toasted nuts: 

Ingredients: – 8 cups whole-grain bread cubes (from about 1 lb loaf of whole-grain bread) – 1/2 cup unsalted butter or olive oil – 1 large onion, diced – 3 stalks celery, diced – 2 apples, cored and diced (such as Granny Smith or Honeycrisp)

– 2 pears, cored and diced – 1 cup chopped mixed nuts (such as pecans, walnuts, or almonds) – 2 cloves garlic, minced – 2 teaspoons dried thyme – 2 teaspoons dried sage – 1 teaspoon dried rosemary

– 1/2 teaspoon ground cinnamon – 1/2 teaspoon salt – 1/4 teaspoon black pepper – 2 cups vegetable or chicken broth – 1/2 cup dried cranberries or raisins (optional) – Chopped fresh parsley, for garnish (optional)

Prepare the Bread Cubes: – Preheat your oven to 350°F (175°C). Spread the bread cubes in a single layer on a baking sheet. Bake for 10-15 minutes, stirring occasionally, until the bread cubes are lightly toasted. Remove from the oven and let cool.

Toast the Nuts: – In a dry skillet over medium heat, toast the chopped nuts for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Remove from the skillet and set aside.

Sauté the Aromatics: – In a large skillet or Dutch oven, melt the butter or heat the olive oil over medium heat. Add the diced onion and celery, and cook for 5-7 minutes, until softened.

Add the Fruit and Nuts: – Stir in the diced apples, pears, toasted nuts, minced garlic, dried thyme, dried sage, dried rosemary, ground cinnamon, salt, and black pepper. Cook for an additional 3-4 minutes, until the fruit is slightly softened and the spices are fragrant.
