Instructions: Make mussel sauce: In a big pot, heat olive oil on medium. Cook chopped onion and minced garlic until softened. Add diced tomatoes, dry oregano, salt, and pepper. Stir well and boil 10 minutes.

Place cleaned mussels in the saucepan, cover, and simmer for 5-7 minutes until they open. Discard closed mussels. Take the mussels out of the pot, leaving the sauce. Roughly slice mussel meat from shells. Put chopped mussels back in sauce. Set aside.

Moussaka prep: Heat the oven to 375°F (190°C). Slice eggplants and place on a parchment-lined baking pan. Rub eggplant slices with olive oil and salt and pepper on both sides. Roast in preheated oven for 15-20 minutes until tender. Set aside after baking.

In another skillet, heat another tablespoon of olive oil on medium. Cook chopped onion and minced garlic until softened. Mix ground cinnamon, dry oregano, salt, and pepper. Mix well. Cook the sliced potatoes in the skillet for 5-7 minutes until tender.

Build the moussaka: Place half the roasted eggplant slices at the bottom of a baking dish. Add half the potato mixture and half the mussel sauce. Repeat layers. Sprinkle shredded mozzarella cheese over the last layer.

Bake the baking dish for 30 minutes in the preheated oven covered with foil. Take off the cover and bake for 15-20 more minutes until the cheese is brown and bubbling.
