For the artichokes:– 4 large artichoke– 2 lemons, halved– Olive oil, for brushing– Salt and pepper, to taste
For the dipping sauce:– 1/2 cup mayonnaise– 1 tablespoon Dijon mustard– 1 tablespoon lemon juice– 2 cloves garlic, minced– Salt and pepper, to taste
1. Start by preparing the artichokes. Trim the stem ends of the artichokes so they can stand upright. Use kitchen shears to trim the sharp tips of the outer leaves. Cut off the top quarter of each artichoke and discard.
